Fruit Smoothies

Ingredients:

  • 50-75g fruit (bananas, raspberries or strawberries
  • 200ml milk
  • 2 tablespoons crushed ice or natural Greek yogurt

Method:

  1. Peel and chop the fruit.
  2. Add the milk and ice or yogurt.
  3. 'Blitz' in a blender.
  4. Pour into a glass and enjoy!




Pancakes (12)

Ingredients:

  • 100g plain flour
  • 1 egg
  • 100ml milk
  • Oil to cook with
  • Filling of your choice

Method:

  1. Sift flour into a bowl.
  2. Make a well in the centre and add the egg.
  3. Whisk in the milk, keep whisking until batter is smooth.
  4. Heat the frying pan and add 1/2 teaspoon of oil.
  5. Add 2-3 tablespoons of batter, tip the pan so that batter covers the bottom of the pan.
  6. When the pancake has set flip it over and cook the other side.
  7. Put on a plate to keep warm and repeat until all the batter is used.
  8. Add the filling of your choice and serve whilst still warm.




Yogurty Brulee (4)

Ingredients:

  • 100g summer fruit (strawberries / raspberries / blackcurrants etc)
  • 1-2 tablespoons sugar to taste
  • 8 tablespoons natural or vanilla-flavour yogurt
  • 4 heaped tablespoons demerara sugar

Method:

  1. Slice the fruit and stew very gently with the 1-2 tablespoons of sugar until soft. Allow to cool completely.
  2. Place the demerara sugar in 4 separate piles on a sheet of foil and place under a very hot grill untill the sugar begins to bubble and melt, then remove from grill and allow to cool and set.
  3. Divide the stewed fruit between 4 ramekin dishes or small bowls.
  4. Add 2 spoons of yogurt to each dish, tap them gently to flatten the yogurt.
  5. Peel the caramel discs from the foil and place on on top of each brulee.
  6. Keep chilled until ready to eat.




Cheese Flan

Ingredients:

  • 150g shortcrust pastry
  • 100g grated cheddar cheese
  • 1 small onion
  • 3 eggs
  • 75ml milk
  • Salt and pepper to taste
  • Tomatoes for garnish

Method:

  1. Preheat oven to 180 degrees C / gas mark 4.
  2. Roll out pastry and use it to line a flan dish. Trim excess pastry from around the edge.
  3. Peel and finely chop the onion. Grate the cheese.
  4. Add the onion and all the cheese to the flan dish.
  5. Whish the eggs, milk and salt and pepper in a separate basin.
  6. Pour the egg mixture into the flan dish, beeing careful not to overfill it.
  7. Plave the dish on a baking try and bake in the oven for 25 minutes or until the egg mixture is set and the top is golden.
  8. Garnish with sliced tomatoes.
